Have a pan of boiling water ready for the pasta, its best to have the pasta cooking while you get the sauce ready and fry the Bacon.

For the sauce, add two egg yolks, two medium sized handfuls of parmesan cheese, about half a tub of double cream and a pinch or two of freshly chopped parsley into a jug, then whisk till all the ingredients are mixed together

Cut the Bacon up into 2cm strips

Add two tablespoons of olive oil into a pan, add the Bacon and fry until cooked

After you've fried the Bacon the pasta should be ready, drain the pasta of water then add the Bacon and sauce, mix till all the pasta has sauce on it

Serve and add sprinkles of Parmesan and Parsley to garnish
