Ingredients

  1. 3 cupall purpose flour
  2. 1 cupyellow cornmeal
  3. 1/4 cupsugar
  4. 2 tbspbaking powder
  5. 2 tspkosher salt
  6. 2 cupmilk
  7. 3 largeeggs - lightly beaten
  8. 2 stickbutter
  9. 8 ozsharp cheddar cheese, grated & divided
  10. 1/3 cupgreen onion, white & green parts & xtra for top before baking
  11. 3 tbspseeded & minced fresh jalepeno

Steps

  1. 1

    combine flour,cornmeal,sugar,baking powder,& salt in a LG bowl

  2. 2

    in a seperate bowl, combine the milk,eggs,& butter

  3. 3

    with the wooden spoon stir the wet into the dry until most of lumps are dissolved - Don't overmix

  4. 4

    mix in 2 cups of the grated cheddar,green onion,Jalepenos & let mixture set at room temp for 20 min's

  5. 5

    meanwhile, preheat oven to 350'

  6. 6

    grease a 9x13x2" baking pan

  7. 7

    pour the batter into the prepared pan

  8. 8

    smooth the top & spread the remaining cheddar & chopped green onion

  9. 9

    bake for 30-35 min's or until a toothpick comes out clean

  10. 10

    cool & cut into LG squares. serve at room temp or warm
