Ingredients

4 servings
  1. 2 cupsheavy cream
  2. Zest from whole lemon and juice set aside
  3. 2large garlic cloves minced
  4. Large jap and red chile minced
  5. Bagsweet peppers diced
  6. Medium Tomato diced
  7. Cajun seasoning
  8. 1/2 boxcasarecce pasta
  9. Parmesan cheese
  10. Parsley minced
  11. 2med chicken breast sliced or marinated whole and grilled

Steps

  1. 1

    Add oil, Cajun seasoning and lemon juice to ziplock back and add chicken and marinate over night

  2. 2

    Pour marinade and chicken in hot pan and sear on high and set aside

  3. 3

    Without using to much of the residual oil add chiles and peppers and sauté for a few and then add the garlic and cook the mix down

  4. 4

    Add heavy cream, lemon zest, juice and 1 tbsp Cajun seasoning and simmer for about 20 minutes

  5. 5

    Season to taste and add more Cajun if needed and then add parsley and simmer again

  6. 6

    Add chicken and heat through, then add Parmesan and simmer

  7. 7

    Add pasta and heat through

  8. 8

    Serve and add tomato, parsley and Parmesan on top
