For pan fried chicken. 1) marrinate the chicken with lenon, salt and pepper.

Now heat a frypan in mediun high heat then add some refined oil on pan.

Then coat the chicken with seasoned flour.

Put the chicken on fry pan till the chicken get golten brown colour and get cook.

Put 2,3 black pepper in vinegar cook and reduce half.

Put a yolk in double boiler then add vinegar in the yolk and whisk continuously then pour clarified butter slowly and whisk fast so it get thick and sauce constancy.

After pouring all butter remove it from the double boiler.

Add orange zest and orange juice to the sauce, add salt and pepper.

Add sauce in pan-fried chicken, garnish and serve hot
