Soak rice and methi together and urad dal in seperate bowl for 6 hours. And make fine paste of it. Use water only if it needs.

Now take both mixture in one bowl and mix it. And keep it in warm place. My suggestion in cold area keep it next to frideg or warm oven. For over night or 10 hours.

To check whether it's fermented or not is first size. It's suppose to be increase 1/3rd and more. Or take spoon and just move it in batter. If you see it's areated it's fermented.

Now grease idli pan with ghee. It gives really nice flavour. Pour 2 tbsp of batter in each section do not pour over as it's going to increase. And cook it on steam for 10 minutes. Serve it with coconut chutney.
