Great way to use up leftover quinoa. You can add in pretty much anything you have (finely chopped cooked broccoli or peppers, for instance), and it will be delicious.

Great way to use up leftover quinoa. You can add in pretty much anything you have (finely chopped cooked broccoli or peppers, for instance), and it will be delicious.

Ingredients

  1. 2.5 cupscooked quinoa, room temp
  2. 3-4large eggs
  3. 1/2 teaspoonsalt
  4. to tastespices (pepper, etc)
  5. 1/2 cupchives
  6. 3 clovesgarlice, chopped
  7. 1/2 cupgruyere or parmessian cheese
  8. ~1 cup bread crumbs
  9. 1 tablespoonolive oil or butter

Cooking Instructions

    Mix quinoa, salt, and eggs in a large bowl

  2. 2

    Stir in the chives, cheese, garlic, and spices

  3. 3

    Add bread crumbs until the mixture is firm enough to form into patties

  4. 4

    Make approx. 12 patties. Smaller is better

  5. 5

    Heat oil over medium low heat in a frying pan

  6. 6

    Cook ~6 patties at a time, 7-10 minutes per side (until golden brown)

  7. 7

    Remove the cooked patties, place on a wire rack to cool, and cook the rest
