Combine all ingredients in mixing bowl and stir with hand mixer on high until completely blended.

On a hot 10" saute pan or crepe pan, spray with nonstick spray and pour on about 1/4 cup of batter.

Swirl and tilt pan around in circular motion until batter is spread very thin and evenly.

Cook for about 45 seconds to a minute on each side or until lightly browned and edges start to crisp.

Serve with sour cream and your choice of jelly or jam.
