cover the chicken with carribean paste & marinade for 1 hour.

pre heat pan with little oil, pre heat oven gas mark 7, pre heat pan with water.

add the chicken (chopped or on bone) to the hot pan with oil, once sealed add the mushrooms & onion (chopped). add all the hebs & seasonings. after 7 minutes add the coconut milk & bring to boil.

add your rice to the boiling water & pinch of salt. turn your chicken to lowest heat & simmer.

add the sugar to the dumpling mix & make into even balls. place on baking tray & pop it in the oven until golden brown.

once done plate up & enjoy. thats simple!
