This Vit-A rich dish can be enjoyed as a sidedish or with roti or as stuffing for sandwich.
Steps

Wash & grate the carrots.

In a pot add oil, season with mustard seeds, urad dal, curry leaves, sliced onions & green chillies.

To the mixture add carrots & chopped capsicum. Add salt & stir fry for 5-7 mins. You can add garam masala if u like it spicy.

Garnish with cilantro & serve hot. Enjoy!!
