Ingredients

500 gramscourgettes sliced
2 tbspbasil pesto
400 gramstomatoes sliced
4 tbspbreadcrumbs
25 gramscheese grated
1 clovegarlic chopped
1 pinchcayenne pepper
1 dasholive oil

Steps

toss courgette slices in pesto until well coated
2

arrange courgette and tomato slices in single layer in an ovenproof dish and season well
3

mix breadcrumbs, cheese, garlic and cayenne pepper and spinkle over courgette and tomatoes. drizzle with olive oil
4

bake for 30 mins gas mark 7 220°c until golden
