Wash your fruits, pick out any bits of stalk, and hull the strawberries. Put fruit and sugar in a pan, cover, and cook slowly for 5 to 10 min.

When the berries let out their juice, turn up the heat and simmer for 5 minutes.

Let the fruit cool, then blend it until it's smooth.

Pour the blend fruit though a srainer to remove the seeds.

Pour the strained fruit into ice cube trays and freeze until solid.

Put the cream in a bowl and whip it till it forms soft peaks when you lift the wisk.

Let the frozen berries thaw for 5 minutes, the roughly chop in a food processor.

Add the cream. Whizz to combie. Add confectioner's sugar for taste.

Serve now ( it is very soft), or freeze for an hour befor serving
