Add little vegetable oil in a pan on the heat and set on the lowest heat possible

Then pour in the sliced tomatoes, pepper and onions

Stir fry for 2 minutes until dry and then add the curry powder

Then pour in the sliced leafy vegetable and stir fry for 1 minute

And then pour in the whisked eggs and stir to mix quickly before it starts to set

Allow to set on low heat and then, use a spatula to gently push and stir

Continue pushing and turning until all areas are set

Allow to simmer for 5 seconds and turn off heat.
