Ingredients

  1. Seasonings
  2. 1garlic salt
  3. 1Chianti Wine
  4. 1olive oil
  5. Pear-fect Canada Goose
  6. 1Bartlett Pears
  7. 1Goose Breast

Cooking Instructions

  1. 1

    filet goose breast in half season with garlic salt(30 min cure)

  2. 2

    boil pears, skin and slice them into qtrs

  3. 3

    sear goose on both sides medium rare in a pan with olive oil

  4. 4

    arrange pear and goose alternately, steep in chianti wine about 1/4 cup or less, garnished to complete
