Ingredients

  • 10 poundgoose
  • As neededsalt
  • 2medium granny Smith apples
  • 24 ouncessmall Yukon gold potatoes
  • 1 cupchicken broth
  • 1large navel orange

Steps

  1. 1

    Preheat oven to 375° Fahrenheit. Open and rinse the goose. Pat dry. Trim the fat and excessive amounts of skin. Add a rack into bottom of the roaster. Take a fork and poke holes into the skin of the goose but don't hit the meat.

    Wash and peel the apples and dice them. Wash and slice the orange.

    Salt the inside and outside of the goose. Stuff the cavity with the orange and apples. Add potatoes around the goose. Roast in oven for 2 hours and forty five minutes. After 1 hour add broth. Cover and allow to rest 15 minutes. Serve I hope you enjoy!!!

I’m cooking it right now, using your temp. Goose from Publix, split in half, covered w apricot preserves (Smucker’s) then using DASH all over, hubby has a tad cholesterol,stroke issue…..so, looking to keep him around a while longer. I have a duck in freezer (also from Publix) I’ll be doing later……should’ve looked more closely at your process though, cut in half down back, cooking breast up on a broiler pan. I’ll let you know how it comes out….I’m starving 😬
