  1. 2goose breasts, skin on, slighty peppered
  2. 2small honey crisp apples, cored, 1/2 inch thick slices
  3. 12small young potatoes, skin on
  4. 12peeled pecan nuts
  5. 1/2 cuprum for flambee
  6. black gound fresh pepper, pinch of salt if desired

  8. Cost. Geese feed themselves here at the farm. My butcher charges $100 for an 8 pound dressed goose, $12 a pound, but we make 40 other meals from one goose, $2.50 per meal. That is why these are special

Cooking Instructions

45 minutes
  1. 1

Sear the breasts. Score the skin on top of the breasts across the grain with a sharp knife, so the fat can escape when melting.

  2. 2

Sear in dry medium heat cast iron pan, five minutes each side, meat side first.

  3. 3

Slide pan in preheated 400F degree oven with roasting tray of ten pecans, two sliced apples, 1/4 inch thick, and 12 small yellow skinned potatoes. Roast 30 minutes, turn oven off, leave vegetable in, take out skillet with goose breasts, add pecans to skillet.

  4. 4

Flambee goose and pecans in skillet with half cup rum. Slice breast, thin as sandwich roast beef, across the diagonal. Serve with potatoes, apple and pecans. Enjoy.

I teach people at the farmers market to grow small scale fruits and vegetables. My grandparents and parents taught me growing, cooking and preserving home grown fruits and vegetables, eggs, meats and fish. I got certified by the University of California Master Gardener Program in 2005. I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste. These are the global, organic and vegan family recipes we use.
