to make the bittergourd not too bitter : soak the sliced bittergourd in a bowl of warm water and add 1 tablespoon of salt. knead and squeeze it with barehand for 5 minutes, than leave it for about 1 hour. strain the bittergourd, and it is ready to cook

preheat the oil in frying pan, put the sliced shallots and onion until you can smell the sweet smell and the onion weak

add sliced paprika, tomato, crushed galangal, bay leaves and minced beef. fry it until the paprika is tender

add the bittergourd and oyster sauce. put small amount of water if you want it more tender. add sugar and small amount of salt to taste. serve it hot/warm. bittergourd is good for anti-cancer, contain lots of anti-oksidan and vitamin. at first it tastes bitter, but the after taste was good and actually addicting for me :-)
