This is a quick and easy, but delicious, chicken and dumplings dish that I enjoy whipping up when I don't have time to make a "long version". This still looks like a lot of ingredients, but I promise it comes together in under 45 minutes.The dumplings are fluffy and biscuit like instead of dense and chewy because I don't like the texture of dense dumplings.

What do you do when you're feeling under the weather, and yet have a craving for chicken parm? If you're me, you pop an extra cold pill, then brainstorm for ways to cut back the work required by the recipe. I came up with two ideas. First, cook the chicken entirely in the oven rather than the usual fry-then-bake, and zhuzh-up store-bought sauce instead of spending 30 to 45 minutes (or more) making homemade marinara. The biggest key to this admittedly lazy recipe was buying chicken breasts that were all about the same thickness. Breasts with differing thicknesses means you'll have to butterfly and/or pound them out, which defeats the purpose of an otherwise quick, no-fuss weeknight meal.

Just made it up today

This is a shortcut version of chicken noodle soup. A hit for a meal during the busy work week when you are wanting a comfort meal!

Sesame chicken

Not really last minute but if you pre-dice the cilantro, onions and jalapenos and tupperware them it saves a lot of time. I've got it down down to 10 minutes of prep. Makes for a quick delicious meal.

I've thrown this together for the family over the years and they've loved it! Even the picky antiveggie kid.

Served with Naan.
