Ingredients

1 tbspolive oil
1/4 cupdiced white onion
1 largediced jalapeno, seeds removed
12 ozshredded white american cheese
4 ozshredded monterrey jack cheese (not preshredded)
1 cupcream, half and half or whole milk
2diced roma tomatoes
1 bunchchopped cilantro

heat oil in sautepan over medium heat

saute onion and pepper until softened and reduced heat to medium low

stir in shredded cheese and 1/4 cup of cream
4

quickly stir until cheese is melted
5

add tomatoes, cilantro and additional cream a little at a time until you reach desired consistency
6

serve immediately
