Chicken and Rice

This is inexpensive, but rich and flavorful. I use whatever i have on hand for the chicken broth, I'll use homemade, canned or bouillon and water, it all works really well. I use extra long grain rice from La Preferida Brand, because it gets so creamy. I make some green beans with onion to serve with it, cuz I like to mix it together!

place chicken breasts into about 12 cups of water

add the bouillon cubes

add black pepper

boil chicken until cooked
- 5
remove chicken from broth and cut up into bite size pieces

set aside and sprinkle with salt and pepper to taste

bring ten cups of broth to a boil

add five cups of rice and return to a boil

turn heat to low and cover, cook for 15 minutes

add chicken to cooked rice along with a cup of broth to keep chicken moist

mix it all up, rice should be loose and creamy
