pre-heat oven 200°c
- 2
lay out sheet of aluminium foil (enough to form a parcel), place fillet on one half.

drizzle 1/4 tbsp of oil on fillet,sprinkle salt to taste.

lay onto fillet 2 each of the orange and lemon slices,top with 1 basil leaf and 1/2 tbsp butter(optional).

fold over unoccupied half of foil and fold in the 3 sided to seal and form a parcel.

repeat steps with remaining fillets.

place in pre-heated oven on baking tray and bake for 25 mins,turning half way through cooking time.

remove from oven and let stand for 5 mins,open parcels,discard orange,lemon and basil.

serve and drizzle over fillet some cooking juices from parcels.

enjoy with come hot chips and a nice garden salad. Or side of your choice.
