Vangyache (baingan) bharta

Roast the baingan after applying little oil all over directly on flame or on hot tava

Remove cover and mash the pulp set aside

In a pan add oil when turns hot add chopped garlic and green chillies. Later coriander and stirr continuesly

Add all dry masalas and stirr continuesly

Cook well masalas add little salt and onion. Stirr continuesly

Cover and cook when turns soft add tomato paste and stirr. cover and cook

When it all gets cooked check salt add baingan pulp
- 8
Mix well cover and cook. Add kokum petals and cook

After 10 mins when oil starts separating sprinkle chopped coriander.

If you want to give smoke taste place hot coal (place in small Bowl) in centre of done bharit pour 1 tsp coconut oil on hot coal and cover immediately. Let it remain 2 mins. Then remove the coal.
