Cook bacon until crisp. Drain well reserving 2 Tbsp drippings.

In large bowl combine flour, sugar, baking powder and salt; stir cheese and bacon.

In small bowl combine egg, milk, butter and reserved bacon drippings.

Divide batter among 10 medium greased muffin cups. (cups will be very full)

variation; omit bacon substitute 2/3 cup chopped cooked ham. Substitute swiss cheese for cheddar. increase melted butter to 1/3 cup
