under low heat, heat oil til hot then add plantains. in about 3-4 minutes turn on other side or just until other side is nice and golden. once all sides are golden, sprinkle sugar. CAREFULLY and I mean CAREFULLY add rhum with oven mittens. stand back a little bit then mix together with a rubber spatula. remove from heat, transfer to a paper towel, and allow to drain from excess oil.

take butter to melt under low heat. once melted, add sliced bananas. turn over once in 3-5 minutes. wait for another 3-5 minutes til you drove from heat and transfer to a plate or cutting board. with the jelly and juice together and add onto the pan with the butter and let it come to a boil. PLEASE WATCH CAREFULLY BEFORE YOU BURN THE MIXTURE. add bananas once mixture is boiled and mix with rubber spatula. add your favorite dark rhum, get a light and CAREFULLY PLACE LIGHT UP THE BANANA SAUCE.

take about 4-5 plantains and form a circle with them in your plate. get a scoop of Ben & Jerry' s Cannoli Icecream and place in the middle of plantains. add the banana flambée sauce and voilà. dessert is served and ENJOY!!!!!!!!!
