Still testing. Saved as draft but was posted anyway. Will update soon. Preheat oven to 180C. Line a tray with baking paper.

Mix oats with nuts & seeds in a large bowl. if using honey, warm until it becomes a liquid. Pour oil & honey/syrup onto oat mix & stir well until coated. If you want it sweeter add some optional Cinnamon, Brown Sugar (l-2 Tbs) or vanilla extract.

Spread Oats mix in a thin layer on tray. Turn often so the mix browns evenly without burning. This may take up to 30 minutes.

Remove from oven & allow to cool a bit. Stir in dried fruit.

Suggestions: Nuts-Almonds, Cashews, Walnuts, Hazelnuts. Seeds-Pepitas (pumpkin), Sunflower, Flaxseed, Sesame. Dried Fruit-Dates, Raisins, Currants,Apricots, Apple, Figs. Check the muesli on the supermarket shelves to get ideas. There is no right or wrong, only your tastes decide what you want to combine.
