Ingredients

  1. Soup
  2. 1 bunchspring onions
  3. 1 bunchfresh coriander
  4. 4 clovegallic
  5. 1 dasholive oil
  6. 450 gramsjarred red peppers
  7. 800 gramstins of chopped tomatoes
  8. 250 mlfat free natural yoghurt
  9. 2 tsppicked jalapeño chilis
  10. 1/2 bunchfresh mint
  11. 2limes

    chop spring onions

  2. 2

    fry with 2 tbsp oil in a hot large lidded pan

  3. 3

    tear in coriander stalks (reserve lanes)

  4. 4

    squash in unpeeled garlic, drained jarred peppers and tinned tomatoes

  5. 5

    pour in 850ml of boiling water and pinch of salt

  6. 6

    cover with lid allow to boil

  7. 7

    blend together yoghurt, chillies with a splash of the picking vinegar and mint

  8. 8

    blend the soup and add juice of half a lime, season (add water to thin if needed)

  9. 9

    drizzle in the yoghurt
