Okay, take one roasting potato for every person you need to serve.

Microwave them for between 8-12 minutes, until they squoosh when you pinch them. Be careful, they're hot and it will hurt.

Put them into a casserole dish that will hold them.

Add butter, sour cream and cheese. Add chopped lunch meat. Mix until you're happy.

Add chopped tomatoes and onions (I prefer fresh, not canned tomatoes). Mix until it's pretty. You could add any fresh vegetable you like here. It's very flexable.

You can top it with fried onions, buttery crackers or more cheese, or nothing. Cover with tin foil and put it into the oven. About 350-375. Bake for about an hour. Because all your ingredients are precooked, you don't have it cook it hard. Just enough so it smells yummy.
