Ingredients

20 servings
  • 18 mediumripe tomatoes
  • 2 eachgreen bell pepper
  • 8 eachfresh white corn
  • 3 mediumVidalia onions
  • 1 cupbaby Lima beans
  • 1 cupokra
  • 1 eachhot pepper
  • 1/4 cupsugar
  • 2 tbspsalt
  • 2 cupwater

Steps

  1. 1

    Pour boiling water over tomatoes to ease peeling. Remove after one minute

  2. 2

    Peel, core, chop tomatoes

  3. 3

    Finely chop onions, bell peppers, and hot pepper

  4. 4

    Slice okra and cut corn from cob

  5. 5

    Place all ingredients in large pot and bring to boil

  6. 6

    Simmer for one hour, stirring occasionally

  7. 7

    Serve with cornbread and freeze remaining soup in freezer bags
