  1. 1 eachsesame oil
  2. 1 eachshallot
  3. 4 clovegarlic
  4. 40 gramsginger
  5. 4 quartdemi
  6. 1/2 cupsoy sauce
  7. 1/4 cupmirin
  8. 1/2 cupcognac

  1. 1

    rough chop shallots, garlic, and ginger

  2. 2

    Slick bottom of kitchen pot with sesame oil. Bring pot up on med-high heat.

  3. 3

    Caramelize shallots, garlic, and ginger on med heat.

  4. 4

    Deglaze pot with mirin, add soy sauce. Reduce to 75%

  5. 5

    Add cognac then demi. Reduce on med-low heat until 15% of liquid remains. Pull of heat.
