my late wife prepared this when we were first going out. I loved it almost as I loved her. She got the recipe from her aunt flora and over time we made a few adjustments. Because it was such a cholesterol fest,she would only make it on father's day and my birthday.

preheat the oven to 350°

spray a13 x 9 casserole dish with non stick cooking spray
- 3
melt the butter in a skillet and add the onion. sweat down till translucent.

in a large mixing bowl, combine the potatoes, cheese, sour cream, and soup. Mix well then stir in the melted butter/onion. pour the mixture into the greased casserole dish and spread evenly.

place the butter pan back on the burner and melt the other stick of butter.

crush the cornflakes in a zip lock bag and dump into the melted butter, sir well and top the potato mixture in the casserole dish.

throw it metaphorically into the oven for 45 minutes or until bubbly. Pull it out and let it set for a few minutes before scalding your mouth
