I recently visited a friend and found some tamarind sauce in her fridge and I had to try it out.

I recently visited a friend and found some tamarind sauce in her fridge and I had to try it out.

Boil the tamarind in a pan with enough water to just cover them on high heat for 5 minutes then remove heat

Let it sit for a few hours or overnight. Using your hands or spoon, remove the seeds and fiber

Sieve the pulp. And put in a blender

Boil the carrots till softned and toss in the blender.

In a pan heat little oil and add minced garlic till it fragrances then transfer it to the blender.

Add salt and all desired seasoning and sweetener then blend till smooth. It's ready for consumption.

Transfer to an air tight container and put in the fridge for upto a week

Can be served with potato wedges or pasta or rice (simply you can use it the same way you use tomato sauce)

Good for marinating chicken.
