Place chicken between wax paper or plastic wrap. Pound until 1/4 thick.

In a wide shallow bowl combine bread and cracker crumbs, parmesan, oregano and pepper. Whisk to combine.

In a separate bowl combine egg and water.

In wide pan place flour.

Dip chicken in flour. Shake off excess

Dip into egg. Dip into breadcrumbs

Heat oil in large pan on medium-high until shimmery

Place chicken in pan. Cook 2 to 3 minutes per side. Use tongs to flip. Do not use fork.

Optional - squeeze lemon juice after frying.
