Sweet& Sunny Mandarin Chicken Stir-Fry

Ingredients

6 servings
  1. 3 boxPerdue Honey Roasted Short Cuts (or 2.5 lbs cooked chicken strips)
  2. 1/2vadallia onion, sliced in thin strips; optional or more if preferred
  3. 1/2green bell pepper sliced in strips; s.a.a
  4. 2 can (11 oz)mandarin oranges, drained, reserving 3/4 cup juice
  5. 1/3 cuppacked brown sugar
  6. 1/4 tspginger
  7. 1/4 tsppepper, preferably white but black is fine
  8. 2 tbsphoney
  9. 1/2 tspgarlic salt, optional
  10. 1 tbspoil ; i use olive but vegetable fine

Cooking Instructions

  1. 1

    Heat oil over medium high heat in skillet, add veggies and cook about 5 minutes til tender crisp

  2. 2

    Lower to medium heat and stir in chicken, mandarin orange juice, brown sugar, honey, ginger, pepper, and sesame oil; cover and cook until liquid absorbed, about 10-15 minutes, stirring occasionally.

    Top with mandarin oranges and serve over white rice. *if you prefer the citrus liquid to have a more glaze-like consistency, drain into a saucepan, add about a tablespoon of cornstarch to a few teaspoons of the excess mandarin orange juice, and stir with a whisk to desired thickness. Pour over the chicken and enjoy!

im an italian mom from nj with 3 very fussy eaters...3 kids (ages 16, 20 & 24) :D very hard to find dishes they all agree on, and now my oldest became a vegetarian so even harder! lol. but love this app and all the great people! i love cooking for and spending time with my family. all things beauty, true crime books and shows,and I'm very interested in homeopathic and natural cures, and living a positive and grateful life... and im a diehard NY Ranger fan.oh, and i LOVE bacon! so thats me :-)
