Steps

Combine Maida,salt and cold butter in a bowl.
Rub with hand to mix Maida with water. - 2
Add little ice water to make dough.
Keep the daough in fridge for 1 hour. - 3
Heat oil in a pan add chopped onion and garlic.
Fry till brown. - 4
Add dry masalas add tomato. Mix and fry.

Add all the veggies.mix well.
Cover it and cook on slow heat.do not over cook.when done add Garam masala. - 6
Remove the dough ball from the fridge, unwrap it, and place on a large piece of parchment paper. Flour your rolling pin, and roll the dough as circularly as possible, to about 1/8-1/4" thick

Place the veggies mixture in the center of the dough, leaving about 2 inches on the edges. Fold the edges up.

Sprinkle the galette with Crumbled paneer and coriander leaves.

Transfer the galette onto a baking pan and bake for 30 to 35 minutes or until the crust is golden brown and crispy. Remove from the oven and let cool slightly before slicing it up.
