Pre-Heat oven to 350°F

In a large sauce pan put in ingredients on the back of the enichilada packet. Bring to a boil and take off heat.

In a large pan cook ground beef until done. Turn off burner.

In a small sauce pan put a table spoon of butter and cook onions until crispy looking(add some salt and pepper if you want)

When onions are finished put them in with the ground beef along with the rotell,green peppers,black olives.

After that put a cup and a half of the sauce in the beef

Grease a large non stick brownie pan (they will stick)

Lay out a tortilla put a spoon full of beef mixture on the center of the tortilla, add a little cheese (depending on how Cheesey you want it) Roll it up and place inside the greased pan

Repeat step 8 until you run out of tortillas.

Pour remaining enchilada sauce over enchiladas

Pour cheese evenly over the sauce.

Put left over beef mixture(if you have any left) over the enchiladas

Bake in oven until cheese is melted.
