This is a recipe I came across. I was trying to mimic my Opa's crepes from my childhood.

Combine all ingredients. I let the mix sit in the fridge for about 5-10 minutes. I don't find that I need to coat the pan with anything as there's already oil in the mixture. Pour a ladle's worth of mix into the frying pan, which should already be heated, tilt as needed to coat the surface. Once the crepe looks matte (it's shiny when it's still raw) I pick up a side (usually with my fingers, I am not recommending this. I don't want you to get burnt), it should be turning a light golden colour, I let it fall onto a plate set aside for cooked crepes. Enjoy (:

*just a yummy suggestion* try squeezing orange juice onto the finished crepe and sprinkle white sugar on it. It's a very light and delicious topping.
