Ingredients

  • 3Racks of ribs
  • Rub
  • 1/2 cupSugar in the raw
  • 1/2 cupPacked light brown sugar
  • 1/2 cupKosher salt
  • 3 tbspChili powder
  • 1 tbspGround cumin
  • 2 tspBlack pepper
  • 2 tspOnion powder
  • 1 tspGarlic powder
  • 1/4 tspGround thyme
  • 1/4 tspCinnamon
  • 1/4 tspChipotle chili powder OR Cayenne pepper
  • Drizzle in the middle
  • 1Honey
  • 1Brown sugar
  • 1Melted butter
  • 1Chili sauce

Steps

  1. 1

    Heat smoker to 275°F.

  2. 2

    Mix rub ingredients and apply to ribs.

    Put ribs in smoker meat side down and set to 235°F. Add pecan wood or wood of choice. Leave them smoking for 2 hours.

  4. 4

    Flip ribs over, add more wood and smoke for 45 more minutes.

  5. 5

    Remove ribs and place on foil. Drizzle with honey, brown sugar, melted butter, and chili sauce.

  6. 6

    Close foil loosely and place back in the smoker for 40 minutes.

  7. 7

    Remove ribs from foil and brush on sweet baby rays BBQ sauce, then return to smoker for 30 minutes and add a small amount of additional wood.

  8. 8

    Remove and let rest for 10 minutes.
