Ingredients

  1. 8 slicesTofurky smoked deli slices
  2. 8 slicecheese
  3. 4eggs
  4. 4whole wheat English muffins

  1. 1

    Split the English muffins and toast each half.

  2. 2

    While the muffins are toasting, spray a large skillet with nonstick cooking spray and Cook the Tofurky for 1 minute on each side.

  3. 3

    Remove Tofurky from heat. Set aside.

  4. 4

    Respray the skillet with cooking spray and Cook eggs sunny side up. Remove from heat and set aside.

  5. 5

    Turn on broiler.

  6. 6

    Place each muffin half on a sheet of foil. Place 1 slice of cheese on each muffin half.

  7. 7

    Broil muffins for 2 minutes or until cheese is melted. Remove from broiler.

  8. 8

    Add 1 slice of Tofurky on each muffin half. Add 1 cooked egg on each muffin bottom. Place the top half of sandwich over the lower half.

  9. 9

    Enjoy!
