Couscous and three-bean salad

A healthy side dish perfect for picnics

Ingredients

  1. 1/2 cupgreen beans
  2. 1/2 cupcarrots, chopped
  3. 1/2 cupyellow pepper
  4. 1 cupinstant couscous
  5. 1 cupbroth from veggies
  6. 1green onion
  7. 2/3 cupdrained chick peas
  8. 2/3 cupdrained kidney beans
  9. dressing
  10. 1/4 cupolive oil, extra virgin
  11. 1zest of lemon grine
  12. 3 tbsplemon juice
  13. 1 tbspdeijon mustard
  14. 1 tsporegano
  15. 1salt and pepper to taste

Cooking Instructions

  1. 1

    Cook all veggies. Use a cup of the veggie broth over the couscous and stir. Cover with plastic and let it steam for 5 minutes. Fluff couscous with a fork.

    Add all the veggies and beans and stir.

  3. 3

    Prepare dressing by stiring all ingridents together. Pour over salad. **note. The longer the dressing sits, the more flavour. I suggest putting it in fridge for an hour before serving.
