Steps

Season your chicken and roast for 20 minutes. Chicken should be tender and juicy when cooked.

While roasting chicken prepare your sauce.

In a food processor add mayonnaise, chutney and curry powder.

Add salt and puree the mixture until all combined.

Cut chicken breasts fillet into bitable cubes and put them into a salad bowl.

Cut celery and scallions into small pieces and add to chicken.

Pour your sauce into the chicken and toss it together.

Refrigerate for 10 minutes.

Warm cashew nuts using your frying pan and add into the salad and toss it together.
