Ingredients

  1. 8 ozPackage of cream cheese, softened
  2. 2 cupCanned pumpkin
  3. 1 cupSugar
  4. 1/4 tspSalt
  5. 1egg plus 3 egg yolks, slightly beaten
  6. 1 cupHalf and half
  7. 1/2 stickMelted butter
  8. 1 tspVanilla extract
  9. 1 tspGround cinnamon
  10. 1/4 tspGround ginger (optional)
  11. 1Pre-made pie crust
  12. 1Whipped cream for topping

    Pre-heat the oven to 350°F.

  2. 2

    For the filling in a large mixing bowl, beat the cream cheese with a hand mixer. Add the pumpkin and beat until combined. Add the sugar and salt and beat until combined. Add the eggs mixed with the yolks, half and half, and melted butter, and beat until combined.

    Finally add the vanilla, cinnamon, and ginger (optional), and beat until fully incorporated.

  4. 4

    Pour the filling into the pie crust and bake for 50 minutes or until center is set. Place the pie on a wire rack and cool to room temperature. Cut into slices and top each piece with a generous amount of whipped cream.
