Ingredients

2 1/2 hours
Makes 45 pieces
  1. 2.2 poundssemolina (1 kilogram)
  2. 1 cupsugar (200 grams)
  3. 1 cupwhole milk (240 ml)
  4. 1 cupvegetable oil (240 ml)
  5. 1/2 teaspoonground mastic, mixed with 1/2 teaspoon sugar
  6. 4 teaspoonsbaking powder
  7. 3 teaspoonsorange blossom water
  8. 3 teaspoonsrose water
  9. 1 teaspoontahini
  10. For the syrup:
  11. 2 1/2 cupssugar (500 grams)
  12. 1 1/2 cupswater (360 ml)
  13. 1 teaspoonrose water
  14. 1 teaspoonorange blossom water
  15. 1 teaspoonlemon juice
  16. For garnish:
  17. 25almonds, halved

  1. 1

    To make the syrup, combine the sugar and water in a small saucepan over medium heat. Stir until the sugar dissolves. When the mixture comes to a boil, add the lemon juice and let it simmer for 10 minutes until it thickens. Add the rose water and orange blossom water, remove from heat, and pour into a large bowl.

    To make the batter, mix all the ingredients together except for the tahini.

    Grease the bottom of a 12-inch (30 cm) round baking pan with tahini. Spread the batter evenly in the pan and let it rest at room temperature for 1 1/2 hours.

    Preheat the oven to medium heat. Place the pan in the oven.

  5. 5

    Remove from the oven and cut the Namoura into diamond shapes while still in the pan. Return the pan to the oven until the Namoura turns golden brown.

  6. 6

    Turn off the oven. Pour the syrup over the hot Namoura, then return it to the oven until all the syrup is absorbed.

  7. 7

    Remove the pan from the oven and place half an almond in the center of each piece. Serve at room temperature.
