  1. 1cooking spray
  2. 4 largeeggs, at rm. temp. separated
  3. 3/4 cupplus 1 tblsp. sugar
  4. 1/4 cupolive oil
  5. 1 tspvanilla
  6. 1/2 tspbaking soda
  7. 1/2 tspsalt
  8. 2 cupalmond flour or meal
  9. 1 cupmixed berries
  10. 3 tspcornstarch

    preheat oven to 350 and spray 8 3 in. ramekin baking cups with cooking spray

  2. 2

    with an electric mixer, beat egg yolks, 3/4 C sugar, olive oil, vanilla, baking soda and salt in a lg. bowl until well blended. add almond flour and beat on low until combined

  3. 3

    place egg whites in a lg. bowl and beat at med. until doubled in volume with soft peaks. add half the beaten egg whites to the almond batter and beat with electric mixer until combined. using a rubber spatula, gently fold the remaining egg whites into the batter. divide the batter among ramekins filling each two-thirds full. bake 14-16 min. rotating halfway through, until edges are golden brown and a toothpick comes out clean. let cool about 15 min.

    for topping, place berries, 1 tblsp. sugar and cornstarch in a lg. microwaveable bowl; toss until combined. microwave on high for 2 min. then stir and microwave again until slightly thickened and steaming about 2 1/2 more min. top each cake with 1-2 tblsp. berry mixture
