Melt-in-Your-Mouth Fluffy Doughnuts

cookpad.japan
cookpad.japan @cookpad_jp

I fervently wanted to eat doughnuts from a certain famous store chain...
Since the ingredients are so close to what it takes to make bread, it's very fluffy.

The dough is very soft, so when you go to fry it, put it gently into the pan.
I wanted to make them slightly chewy and sticky so I tried using rice flour. However the texture turned out to be too hard, so I recommend you use bread flour. For 8 doughnuts. Recipe by sayata

Steps

  1. 1

Add all of the ingredients into a bread machine, set it to the dough setting and let it knead it.

  2. 2

Without letting the dough ferment, take it out, break it into 8 even portions and make them into round balls. Let it sit for 15 minutes covered with a damp towel.

  3. 3

Use a rolling pin to roll the dough out to a 5 mm thickness, and cut out the doughnuts with a doughnut cutter.

  4. 4

Once the dough has risen for about 20 minutes at 40℃, deep fry the doughnuts at 170℃ till they turn golden brown.

  5. 5

While they are still hot, cover them with cinnamon sugar, maple syrup, or sugar dissolved in water, etc. etc. The dough isn't that sweet so be generous with whatever you use.
