  • 1 canPumpkin puree (15 oz.)
  • 1 canEvaporated milk (10 oz.)
  • 1 cupLight brown sugar
  • 3 tspPumpkin pie spice
  • 3Eggs (slightly beaten)
  • 1 boxYellow cake mix
  • 1 cupButter melted (2 sticks)
  • 1 cupChopped walnuts (crushed graham crackers or pecans are good too)
  • 1/2 cupToffee bits (optional)

    Preheat oven to 350°F

  2. 2

    Spray a 9 x 13 baking pan lightly with cooking / baking spray.

  3. 3

    In a large bowl combine the pumpkin, evaporated milk, sugar, eggs and pumpkin spice. Stir to combine.

  4. 4

    Pour into your prepared pan.

  5. 5

    Sprinkle your entire box of cake mix on top, followed by your nuts or graham cracker and toffee chips.

  6. 6

    Pour your melted butter evenly on top.

  7. 7

    Bake for 45-50 minutes until center is set and edges are lightly browned.
