  • 300 gramsPumpkin, small cubes
  • 1 cupWholemeal pasta
  • 1/2 cupCherry tomatoes
  • 1as needed Basil
  • 1 tbspOlive oil
  • 2Vegetarian sausages

    Bake pumpkin and vegetarian sausages in oven at 180C for 20 minutes. Whilst in oven, cook pasta for 10minutes until al dente.

  2. 2

    Drain water from pasta and add pumpkin and olive oil to the pot (with salt if you want). Shake with lid on until pumpkin has mashed up a bit - this works as a kind of sauce. Slice the sausages and add to pot with tomatoes. Cool to room temp before adding basil.

    Nutrition per serving: 212.5 calories, 12.9g fat, 7.8g protein, 20.7g carbs

  4. 4

    You can replace the vegetarian sausages for regular ones just note this will have a higher calorie and fat content than the nutritional data I provided :)
