Toasted almonds

Toasted almonds are one of Spain's best kept secrets. Delicious served with a freezing cold beer and olives in Summer, or with any aperitif at any other time of the year. Actually I bought these almonds to make biscottis, but had a little accident in my kitchen today, they got wet, and so I needed to use them up quickly and decided to make one of the most irresistible Spanish snacks under the sun.

Heat the oil in a pan and get the almonds ready

When the oil is hot, add the almonds and turn the heat down to minimum
- 3
As the almonds brown, keep moving all the time - this is really important to prevent burning
- 4
When they are browned, drain off all the oil and then transfer to a bowl lined with kitchen paper. Add salt.

Transfer to a serving dish and resign yourself to the fact that in less than 30 minutes, there will be no trace of almonds ever having being made in your house :-)
