A popular Egyptian street food. Vegetables and split dried fava beans are ground together, shaped into patties, fried, and served with bread and vegetables.

Soak the fava beans in plenty of water in a bowl for 10 hours, then drain and rinse well.

In a bowl, combine the fava beans with the remaining ingredients.

Place the mixture in a food processor and blend until smooth. Let it rest for 15 minutes.

Heat the oil in a pot over high heat.

Shape the mixture into patties using a falafel mold or your hands, and carefully place them one by one into the hot oil. Fry until golden brown, then remove and drain.
