SP.0045 - Dried Shrimp Wonton Soup

When I got home from work, my partner had already cooked for me ^^. Today, I forgot to come home early to take my partner out, and they went out alone... but before going out, my partner thoughtfully made dinner for me and even poured a glass of milk on the table ^^.
Steps
- 1
Mix the ground pork, shrimp, and pork paste together. Add minced shallots and season to taste. Add a little tapioca starch and mix well.
- 2
Soak the wood ear mushrooms until soft, remove the stems, and chop finely. Add to the filling and mix well.
- 3
Lay out the wonton wrappers and wrap the filling.
- 4
Boil water, add a little cooking oil, and cook the wontons until done. Drain well.
- 5
Pour the chicken broth into a pot. Rinse the dried shrimp, drain, then sauté with fragrant shallots briefly before adding to the pot. Bring to a boil, then lower the heat and skim off any foam to keep the broth clear. Cook until the dried shrimp are soft and the broth is flavorful.
- 6
Season to taste.
- 7
Add the green onions and turn off the heat.
- 8
Place the wontons in a bowl and ladle the hot broth over them.
- 9
Add fish sauce if needed for extra flavor.
