Ingredients

  1. 1/2 cupboiled chick peas
  2. 1/4 cupboiled carrots, pumpkin, French beans, zucchini
  3. 1/4 cupeach cubed capsicum, red bell pepper, yellow bell pepper
  4. 1/2 cupchopped onion
  5. 1 tbspchopped garlic
  6. 1 tbspchopped celery
  7. 1 tbspchopped mint
  8. 1 tbspchopped coriander leaves
  9. 1/4 cuptomato purée
  10. 1 tbsptomato ketchup
  11. 1medium tomato chopped
  12. 1 tspred chilli powder
  13. 1 tspcinnamon powder
  14. 1 tspcumin powder
  15. 1 tbspolive oil
  16. to tasteSalt
  17. Ingredients for couscous
  18. 1/2 cupcouscous
  19. 1/2 cupboiled water
  20. 1/4 tspsalt
  21. 1 tspchilli flakes, 1 tbsp coriander leaves
  22. 1 tspchopped garlic
  23. 1/4 cupchopped spring onion
  24. 1 tbspbutter

Steps

  1. 1

    For veggies

  2. 2

    Heat oil in a pan and add garlic. Sauté for 30 second.

  3. 3

    Add onions and sauté till pink

  4. 4

    Add capsicum and bell peppers and sauté for 1 minute.

  5. 5

    Add tomato and cook till it’s soft

  6. 6

    Add remaining ingredients and 1 cup water

  7. 7

    Cook for 5-7 minutes until all veggies r cooked

  8. 8

    Serve hot with couscous

  9. 9

    For couscous

  10. 10

    Heat 1 tbsp oil and add garlic and spring onions. sauté for a minute and keep aside

  11. 11

    In a large bowl with lid, put couscous, sautéed garlic, onions, chilli flakes, coriander leaves and remaining 1 tsp oil. Mix well

    Add 1 cup boiled water and cover

  13. 13

    Let it stand for 5 minutes

  14. 14

    Remove the lid and add 1? tbsp butter and mix through couscous using a fork.

  15. 15

    Serve with veggies

  16. 16

    Enjoy endlessly
