For veggies

Heat oil in a pan and add garlic. Sauté for 30 second.

Add onions and sauté till pink

Add capsicum and bell peppers and sauté for 1 minute.

Add tomato and cook till it’s soft

Add remaining ingredients and 1 cup water

Cook for 5-7 minutes until all veggies r cooked

Serve hot with couscous

For couscous

Heat 1 tbsp oil and add garlic and spring onions. sauté for a minute and keep aside

In a large bowl with lid, put couscous, sautéed garlic, onions, chilli flakes, coriander leaves and remaining 1 tsp oil. Mix well

Add 1 cup boiled water and cover

Let it stand for 5 minutes

Remove the lid and add 1? tbsp butter and mix through couscous using a fork.

Serve with veggies
