Melt butter over medium heat in a saucepan. Whisk in flour and sugar

Gradually add the milk, stirring frequently. Cook until mixture boils.

Boil 1 min then remove from heat

Stir in 1/4 cup of sugar. Whisk in egg yolks until well blended

Transfer to a bowl and let cool for 30 min

Stir in liqueur and orange peel

Preheat oven to 375°F.

Grease 10 6 oz ramekins and sprinkle with 3 tbsp sugar

Beat egg whites and remaining sugar until stiff peaks form

Fold 1/3 of egg mixture into milk mixture

Then fold milk mixture into remaining egg whites

Spoon into ramekins and bake until set about 30 min. Serve immediately
